Method

1Preheat the 3L Fryer with a little oil. Add the prosciutto and cook until it becomes crisp. Tear the prosciutto into pieces and set aside.
2Sauté the diced onion, garlic, sage, flat leaf parsley and rosemary in the 3L Fryer.
3Continue frying until the onion turns light brown, then spread the onion evenly around the fryer and add the chicken breast.
4Sear the chicken on both sides on a low heat until the meat becomes golden and the onion is caramelized. Remove the chicken breast and set aside.

5Turn to a medium heat and add the white wine. Cook until the wine is reduced by half.
6Add in the button mushrooms, tomatoes, shredded prosciutto and tomato paste. Add the chicken stock last, covering the pan with the lid and simmering on a low heat for 15 to 20 minutes.
7Put the chicken breast back into the fryer and cook until done. Sprinkle with salt and black pepper, serve.
